1. Preheat oven to 375°F and combine lemon juice, zest, olive oil, garlic, salt, pepper, and herbs in a bowl.
2. Marinate chicken breasts in mixture for 20–30 minutes.
3. Heat an oven-safe skillet over medium-high heat and sear chicken 2–3 minutes per side until golden.
4. Remove chicken and sauté onion in the same pan until translucent.
5. Stir rice into onions for 1 minute, then add broth and turmeric.
6. Nestle chicken on top of rice, cover with foil, and bake for 25–30 minutes until rice is tender and chicken reaches 165°F.
7. Meanwhile, whisk olive oil, balsamic vinegar, Dijon, garlic, honey, salt, and pepper for dressing.
8. Toss mixed greens, tomatoes, cucumber, and onion with dressing just before serving.
