1. Cook the orzo in salted boiling water until al dente, about 8 to 10 minutes.
2. Drain and rinse the orzo under cool water, then spread it on a sheet pan to cool.
3. Meanwhile, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and herbs.
4. Whisk together lemon juice, lemon zest, olive oil, salt, and black pepper in a mixing bowl to make the dressing.
5. Combine the cooled orzo, corn, tomatoes, cucumber, red onion, parsley, basil, and mint in a large bowl, then pour over the dressing and toss gently.
6. Taste and adjust seasoning with extra lemon juice or salt, then top with crumbled feta or shaved Parmesan if desired.
