1. Cook bacon in a large pot over medium heat until crispy, remove and reserve fat
2. If needed, add olive oil, then sauté onion, celery, and carrots until softened, 4–5 minutes
3. Stir in garlic and thyme, cook 1 minute
4. Add diced chicken, season lightly, cook until edges turn white
5. Sprinkle flour over mixture and stir to coat
6. Gradually pour in chicken broth while stirring, bring to a gentle simmer
7. Add bay leaf and corn, simmer uncovered for 15–20 minutes until chicken is cooked and vegetables are tender
8. Stir in milk, return crumbled bacon to pot, heat gently without boiling, garnish with parsley and reserved bacon
