Description

These loaded sheet pan fajitas are a colorful, flavorful one-pan meal perfect for busy weeknights. With minimal prep and easy cleanup, they deliver bold Tex-Mex taste and healthy ingredients in every bite.

  • 1.5 lbs chicken breasts boneless skinless
  • 3 bell peppers red yellow green sliced
  • 1 large red onion sliced
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 2 tbsp fajita seasoning
  • 2 garlic cloves minced
  • salt and black pepper to taste
  • 6 small tortillas
  • cilantro for garnish

  • Instructions

    1. Preheat the oven to 400°F and line a rimmed sheet pan with parchment paper.

    2. Slice chicken breasts into ½-inch strips and slice bell peppers and onion into uniform pieces.

    3. In a large bowl toss chicken garlic vegetables olive oil lime juice fajita seasoning salt and pepper until evenly coated.

    4. Spread the mixture in a single layer on the prepared sheet pan to ensure even roasting.

    5. Bake for 20–25 minutes, turning halfway, until chicken reaches 165°F and vegetables are lightly charred.

    6. Remove from oven and squeeze fresh lime juice over the top then sprinkle with chopped cilantro.

    7. Warm tortillas and serve fajita mixture immediately or cool before storing for meal prep.
