Ingredients

  • 1 scoop vanilla or plain protein powder
  • 1 cup rolled oats (blended)
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 3/4 cup milk or almond milk
  • 1 teaspoon baking powder
  • 1 tablespoon honey or maple syrup
  • fresh fruit for topping (optional)
  • nuts or chocolate chips for topping (optional)

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease a muffin tin.

    2. In a bowl, mix blended oats, protein powder, and baking powder.

    3. In another bowl, whisk eggs, Greek yogurt, milk, and honey or syrup until smooth.

    4. Fold dry ingredients into wet ingredients until just combined.

    5. Divide batter among muffin cups and add optional toppings.

    6. Bake for 18–20 minutes or until a toothpick comes out clean.

    7. Let muffins cool before removing from the tin.

    8. Store in the fridge up to four days or freeze up to one month.
