1. preheat oven to 400°F (200°C)
2. whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper in a small bowl
3. place chicken in a bowl or bag and pour half of the glaze over it, toss to coat and marinate for 15 to 30 minutes
4. toss vegetables with remaining glaze in a bowl until evenly coated
5. arrange chicken and vegetables in a single layer on a lined baking sheet
6. roast for 25 to 30 minutes or until chicken reaches 165°F and vegetables are tender, flipping halfway through
7. optionally broil for 2 to 3 minutes for extra caramelization
8. garnish with fresh herbs and lemon wedges before serving
