Maple Dijon Chicken & Veggies Sheet Pan Dinner

Description

An easy one-pan meal featuring tender chicken breasts and roasted vegetables coated in a sweet and tangy maple-Dijon glaze. Perfect for quick weeknight cooking with minimal cleanup.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 zucchini, chopped
  • 1 red onion, cut into wedges
  • 1 cup broccoli florets
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • fresh herbs (thyme or rosemary) optional
  • lemon wedges for garnish optional

  • Instructions

    1. preheat oven to 400°F (200°C)

    2. whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper in a small bowl

    3. place chicken in a bowl or bag and pour half of the glaze over it, toss to coat and marinate for 15 to 30 minutes

    4. toss vegetables with remaining glaze in a bowl until evenly coated

    5. arrange chicken and vegetables in a single layer on a lined baking sheet

    6. roast for 25 to 30 minutes or until chicken reaches 165°F and vegetables are tender, flipping halfway through

    7. optionally broil for 2 to 3 minutes for extra caramelization

    8. garnish with fresh herbs and lemon wedges before serving
