1. Preheat the oven to 425°F (220°C).
2. Line a large sheet pan with foil or parchment paper.
3. Whisk together maple syrup, Dijon mustard, olive oil, garlic, salt, pepper, and lemon zest in a bowl.
4. Pat chicken thighs dry and toss with one third of the glaze.
5. Toss Brussels sprouts with a drizzle of olive oil, a pinch of salt, and one third of the glaze.
6. Arrange chicken skin-side up on one side of the pan and Brussels sprouts on the other, making sure they are not crowded.
7. Roast for 20 minutes, then stir the Brussels sprouts and flip any pieces to promote even browning.
8. Continue roasting for another 15 minutes or until chicken reaches 165°F (74°C) internally.
9. Brush the remaining glaze over the chicken and sprouts, then roast for 5 more minutes to caramelize.
10. Remove from oven and let chicken rest for 5 minutes before serving.
