Description
These Maple Glazed Carrots are tender carrots roasted in a buttery maple syrup glaze until glossy and caramelized. They make a simple yet elegant baked vegetable side dish for weeknight dinners or holiday gatherings.
Ingredients
- 1 1/2 pounds fresh carrots peeled and cut into 2-inch pieces
- 3 tbsp pure maple syrup
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- Salt to taste
- Pepper to taste
- 1/2 tsp fresh thyme optional
- 2 tbsp pecans or walnuts optional
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Peel carrots and cut into uniform 2-inch pieces for even roasting.
3. In a small saucepan over low heat, melt butter then stir in maple syrup, olive oil, salt, pepper, and thyme if using until smooth.
4. Place carrots in a mixing bowl, pour warm glaze over them, and toss to coat evenly.
5. Spread carrots in a single layer on the prepared baking sheet, avoiding overcrowding.
6. Roast for 25–30 minutes, flipping halfway through, until carrots are fork tender with slightly browned edges.
7. Optional: drizzle an extra teaspoon of warm maple syrup and sprinkle chopped nuts or sea salt before serving.
