1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
2. In a large bowl, stir together oats, pecans, cinnamon, and salt until evenly mixed.
3. Warm maple syrup and coconut oil until melted, then whisk in vanilla extract.
4. Pour the syrup mixture over the dry ingredients and stir until all oats and pecans are coated.
5. Spread the mixture in an even layer on the prepared baking sheet.
6. Bake for 25 minutes, stirring once halfway through to ensure even browning.
7. Remove from the oven and let cool completely on the baking sheet for 30 to 45 minutes to form clusters.
8. Transfer the cooled granola to an airtight container and store at room temperature for up to two weeks.
