  • 2 cups unsweetened milk (dairy or non-dairy)
  • 1/3 cup pure maple syrup
  • 2 large eggs
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon pure vanilla extract
  • 3/4 cup chopped toasted pecans
  • 1 tablespoon chia seeds or flaxseed meal (optional)
  • 1/4 cup extra chopped pecans for topping

  • Instructions

    1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.

    2. Toast the pecans on a baking sheet for 5 minutes until fragrant and set aside.

    3. In a large bowl, whisk together rolled oats, baking powder, cinnamon, and salt.

    4. In another bowl, whisk eggs, milk, maple syrup, melted coconut oil or butter, and vanilla extract until smooth.
