  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint

  • Instructions

    1. Combine Greek yogurt, olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl

    2. Add chicken and coat well, then refrigerate for at least 1 hour

    3. Heat a grill pan over medium-high heat and cook chicken 5–7 minutes per side until cooked through

    4. Let chicken rest then slice into strips

    5. Mix grated cucumber, yogurt, garlic, lemon juice, dill, salt, and olive oil to make tzatziki

    6. Divide quinoa among containers and top with chicken, tomatoes, cucumber, red onion, and feta

    7. Spoon tzatziki over each bowl or pack separately

    8. Garnish with parsley and mint before serving
