Instructions
1. Cut chicken into even 1.5-inch cubes and place in a bowl.
2. Whisk together olive oil, lemon juice, garlic, oregano, salt, pepper and optional spices.
3. Pour marinade over chicken, toss to coat, cover and refrigerate for 2–6 hours.
4. Soak wooden skewers in water for 20 minutes if using.
5. Thread chicken cubes alternately with onion and pepper onto skewers.
6. Preheat grill to medium-high heat and oil grates.
7. Grill skewers 4–5 minutes per side until internal temperature reaches 165°F.
8. Optional: brush with leftover marinade during the last minute of grilling.
9. Let rest 5 minutes before serving with tzatziki, flatbread and lemon wedges.
