Description

This colorful Mediterranean chicken and veggie stir fry is a quick and healthy dinner perfect for busy weeknights. Tender chicken, crisp vegetables, and zesty herbs come together in just 15 minutes for a flavorful, balanced meal.


Ingredients

  • 2 medium boneless skinless chicken breasts (about 1 lb / 450 g)
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 large red bell pepper, sliced
  • 1 medium zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1/2 large red onion, thinly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil or a handful fresh basil leaves
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • 2 tablespoons crumbled feta (optional)

  • Instructions

    1. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.

    2. Add the sliced chicken, season with salt, pepper, and half of the oregano, and cook until golden and cooked through, about 4 to 5 minutes, then remove from the pan.

    3. Add the remaining olive oil to the skillet and sauté the red onion and bell pepper for 2 minutes.

    4. Stir in the zucchini and garlic and cook for another 2 minutes until the vegetables are crisp-tender.

    5. Return the chicken to the skillet along with the cherry tomatoes, remaining oregano and basil, and lemon juice and cook for 1 to 2 minutes until the tomatoes soften.

    6. Adjust seasoning with salt, pepper, or more lemon juice, then garnish with crumbled feta if desired and serve immediately.
