Description

This vibrant Mediterranean chickpea and orzo salad combines creamy feta, tangy lemon, and fresh herbs for a refreshing and satisfying dish. It’s easy to prepare and perfect for meals, picnics, or meal prep.


Ingredients

  • 1 cup orzo pasta
  • 1 1/2 cups cooked chickpeas
  • 1/2 cup crumbled feta cheese
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • salt and black pepper to taste

  • Instructions

    1. Cook the orzo in salted boiling water until al dente, then drain and rinse under cold water.

    2. Rinse and drain the chickpeas and pat dry.

    3. In a small bowl whisk together olive oil, lemon juice, lemon zest, salt, and pepper until emulsified.

    4. In a large bowl combine orzo, chickpeas, cucumber, tomatoes, red onion, parsley, and mint, then drizzle with the dressing and toss gently.

    5. Sprinkle the feta over the salad and stir lightly to distribute.

    6. Refrigerate for at least 20 minutes before serving to allow flavors to meld.
