Ingredients
- 3 lbs sweet potatoes (Beauregard or Garnet)
- 2 tablespoons olive oil
- 3 tablespoons pure maple syrup
- 1/2 cup coconut milk or light cream
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1 teaspoon fresh rosemary or thyme, finely chopped (optional)
- 1/4 cup crushed pecans or walnuts
- 1/2 cup mini marshmallows or sliced apples (optional)
Instructions
1. Preheat oven to 400°F (200°C) and grease a baking sheet
2. Peel and cube sweet potatoes into 1.5 inch pieces
3. Toss potatoes with 1 tablespoon olive oil and salt and roast 25 to 30 minutes until tender
4. Mash roasted potatoes with remaining olive oil, maple syrup, coconut milk, cinnamon, nutmeg, and herbs until smooth
5. Spread half of the mash in a casserole dish, sprinkle nuts, then top with remaining mash
6. Brush top with maple syrup and bake at 375°F (190°C) for 20 to 25 minutes until edges crisp
7. Let rest 5 minutes before serving
