Description

These mini stuffing cups combine leftover turkey and stuffing into bite-sized, crispy treats perfect for extending your holiday feast. They bake quickly in a muffin tin and can be customized with herbs or sweet accents.


Ingredients

  • 3 cups leftover stuffing
  • 2 cups cooked turkey cubes
  • 2 large eggs
  • 2 tbsp fresh parsley and thyme
  • 2 tbsp melted butter
  • salt and pepper to taste
  • 1 tbsp chicken broth if needed
  • optional: 1/4 cup dried cranberries

  • Instructions

    1. preheat oven to 375°F and grease a 12-cup muffin tin

    2. in a bowl combine stuffing, beaten eggs, herbs, salt, pepper and broth if dry

    3. press a spoonful of stuffing mixture into each muffin well

    4. add turkey cubes into each cup and top with more stuffing

    5. brush tops with melted butter for extra crispness

    6. bake for 20–25 minutes until golden brown

    7. let cups rest for five minutes before removing and serving
