These no bake apple cinnamon energy bites combine the sweet flavor of dried apples with warm cinnamon for a quick, healthy snack. They require minimal prep, no baking, and are perfect for on-the-go energy.

1. Combine rolled oats, ground cinnamon, dried apples, chia seeds or flaxseed meal, and salt in a large bowl.
2. Add almond butter, honey or maple syrup, and vanilla extract to the dry mixture and stir until cohesive.
3. If mixture is too dry, add a teaspoon of water or additional nut butter; if too sticky, add a bit more oats.
4. Roll the mixture into 1-inch balls using lightly oiled hands or a small scoop.
5. Place the balls on a tray and refrigerate for at least 20 minutes to firm up.
6. Store in an airtight container in the refrigerator for up to 7 days or freeze for up to 1 month.
