Description

These no-bake carrot cake energy balls combine grated carrots, oats, nuts, dates, and warm spices into a simple, nutrient-dense snack perfect for any time of day. They offer all the flavor of carrot cake without refined sugar or an oven.


Ingredients

  • 1 cup grated carrots
  • 1 cup rolled oats
  • 6 medjool dates, pitted
  • ½ cup raw almonds
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • pinch of salt
  • optional: 1 scoop plant-based protein powder

  • Instructions

    1. Peel and grate the carrots, then pat dry.

    2. In a food processor, pulse oats, dates, almonds, cinnamon, nutmeg, and salt until crumbly and sticky.

    3. Add grated carrots, shredded coconut, vanilla extract, and protein powder if using; pulse until evenly mixed.

    4. Scoop 1 tablespoon portions and roll into balls.

    5. Optionally roll balls in extra shredded coconut or crushed nuts.

    6. Chill in the refrigerator for 30–45 minutes before serving.
