Description
These no-bake granola bars combine creamy peanut butter or Wowbutter with puffed grains, seeds, and natural sweetness for a quick, healthy snack. They set in the fridge without using the oven and are perfect for vegan, dairy-free, or nut-free diets.

Instructions
1. Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
2. In a large bowl, combine puffed rice, shredded coconut, chia or flaxseeds, and sea salt.
3. In a small saucepan over low heat, warm Wowbutter and maple syrup, stirring until smooth and runny, about 2–3 minutes. Remove from heat and stir in vanilla if using.
4. Pour the warm mixture over the dry ingredients and stir quickly until evenly coated.
5. Transfer the mixture to the prepared pan and press firmly and evenly using a spatula or the bottom of a measuring cup.
6. Refrigerate for at least 1 hour, or freeze for 20–30 minutes, until firm.
7. Lift the chilled slab using the parchment overhang and place on a cutting board. Slice into 12 bars.
8. Store bars in an airtight container in the refrigerator for up to 10 days or freeze for up to 3 months.
