1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or prepare a container if chilling.
2. Blend cottage cheese, protein powder, cocoa powder, sweetener, vanilla extract, and coconut oil in a food processor until smooth and creamy.
3. Transfer the mixture to a bowl and stir in almond flour and salt until a dough forms, adding more almond flour if needed to hold shape.
4. Fold in chocolate chips if using, then scoop tablespoonfuls of dough and roll into 1 inch balls.
5. For baked bites, place balls on the baking sheet and bake for 8–10 minutes until edges are firm but centers remain soft, then let cool on the sheet.
6. For no-bake bites, refrigerate the shaped balls for at least 1 hour until firm.
7. Store finished bites in an airtight container in the fridge for up to five days or freeze for up to two months.
