1. Pat chicken dry and season both sides with salt and pepper.
2. Heat olive oil or butter in a large skillet over medium-high heat.
3. Add chicken and sear 4–5 minutes per side until golden; remove and set aside.
4. In the same skillet, add mushrooms and cook 5–7 minutes until browned.
5. Stir in garlic and cook 30 seconds until fragrant.
6. Pour in chicken broth and scrape up browned bits.
7. Add heavy cream and stir to combine into a sauce.
8. Return chicken to skillet, reduce heat to low, cover, and simmer 10 minutes until cooked through and sauce thickens.
9. Stir in spinach and cook 1 minute until wilted.
10. Sprinkle chives and Parmesan over the top, adjust seasoning, and serve hot.
