Description

This one pan garlic baked chicken with potatoes and broccoli is a simple, hearty weeknight dinner. The dish combines tender chicken, golden potatoes, and crisp broccoli in a flavorful garlic-parmesan sauce with minimal cleanup.

  • 2 to 3 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 3 medium russet potatoes, diced
  • 3 cups broccoli florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • salt and black pepper to taste
  • 1 tablespoon lemon juice (optional)

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Pat chicken breasts dry and set aside.

    3. In a large bowl, whisk olive oil, garlic, parmesan, dried thyme, oregano, parsley, salt, pepper, and lemon juice.

    4. Toss potatoes in half of the garlic-parmesan mixture and spread on a rimmed sheet pan.

    5. Bake potatoes for 15 minutes.

    6. Coat chicken and broccoli in remaining sauce.

    7. Add chicken to the pan with potatoes and bake for 20 minutes.

    8. Add broccoli to the pan and bake for an additional 10 minutes.

    9. Check that chicken reaches an internal temperature of 165°F and let rest for 5 minutes.

    10. Toss everything on the pan to absorb juices and serve immediately.
