1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
2. In a bowl, combine olive oil, paprika, garlic powder, onion powder, salt, pepper, and dried herbs, then coat the chicken evenly and let rest for 15–30 minutes.
3. Toss the potatoes, carrots, bell pepper, onion, and garlic with the remaining spice mix and spread in a single layer on the prepared pan.
4. Nestle the marinated chicken pieces among the vegetables and roast for 40–45 minutes for thighs or 30–35 minutes for breasts, flipping the vegetables halfway through.
5. Check that the chicken reaches an internal temperature of 165°F (74°C) and, if desired, broil for 2–3 minutes to crisp the skin.
6. Let the chicken rest for 5–10 minutes, then garnish with parsley and serve with lemon wedges if using.
