  • 3 bell peppers (varied colors), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 tbsp fajita seasoning
  • 1/2 lb shrimp, optional, peeled and deveined
  • Tortillas, for serving

  • Instructions

    1. Preheat oven to 400°F and line a rimmed sheet pan with parchment or spray with cooking spray.

    2. Slice chicken, bell peppers, and onion into uniform strips.

    3. In a large bowl, toss chicken and vegetables with olive oil, lime juice, and fajita seasoning until evenly coated.

    4. Spread the mixture in a single layer on the prepared sheet pan without overcrowding.

    6. If using shrimp, add it to the pan during the last 6–8 minutes of roasting.
