1. Preheat the oven to 375°F (190°C) and lightly oil or line a baking dish with parchment paper.
2. In a bowl, mix cream cheese, Greek yogurt, chopped spinach, artichoke hearts, mozzarella, parmesan, minced garlic, salt, and pepper until smooth.
3. Pat chicken breasts dry and slice each horizontally to create a pocket without cutting all the way through.
4. Brush chicken with olive oil and season with salt and pepper on both sides.
5. Spoon the spinach artichoke mixture into each chicken pocket and secure with toothpicks if needed.
6. Place the stuffed breasts in the prepared baking dish and drizzle a little olive oil on top.
7. Bake for 25–30 minutes, or until the internal temperature reaches 165°F (75°C).
8. Remove from the oven and let rest for 5 minutes before serving.
