Oven Baked Spinach Artichoke Stuffed Chicken

Description

This easy low carb dinner features juicy chicken breasts filled with a creamy spinach and artichoke mixture. It bakes to golden perfection for a healthy, high protein meal that reheats well.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach chopped
  • 1 cup artichoke hearts drained and chopped
  • 4 ounces cream cheese softened
  • 1/4 cup grated parmesan
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

  • Instructions

    1. Preheat the oven to 375°F and lightly grease a baking dish.

    2. In a bowl combine cream cheese spinach artichokes garlic parmesan salt and pepper until smooth.

    3. Slice a horizontal pocket into each chicken breast without cutting through.

    4. Fill each chicken pocket with the spinach artichoke mixture and secure with toothpicks if needed.

    5. Brush the outside of the chicken with olive oil and season with salt and pepper.

    6. Place the stuffed chicken in the baking dish and bake for 25 to 30 minutes or until the internal temperature reaches 165°F.

    7. Let the chicken rest for 5 minutes after baking to retain juices and set the filling.

    8. Slice the chicken to reveal the creamy filling and serve with low carb sides.
