1. Preheat the oven to 375°F and lightly grease a baking dish.
2. In a bowl combine cream cheese spinach artichokes garlic parmesan salt and pepper until smooth.
3. Slice a horizontal pocket into each chicken breast without cutting through.
4. Fill each chicken pocket with the spinach artichoke mixture and secure with toothpicks if needed.
5. Brush the outside of the chicken with olive oil and season with salt and pepper.
6. Place the stuffed chicken in the baking dish and bake for 25 to 30 minutes or until the internal temperature reaches 165°F.
7. Let the chicken rest for 5 minutes after baking to retain juices and set the filling.
8. Slice the chicken to reveal the creamy filling and serve with low carb sides.
