  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded potatoes, thawed and dried
  • 2 tablespoons olive oil or butter
  • 1 tablespoon chopped parsley (optional)

  • Instructions

    1. Place cubed potatoes in a pot of salted water and bring to a boil over medium-high heat.

    2. Simmer until potatoes are fork-tender, about 15-20 minutes, then drain and return to pot.

    3. Melt butter in a saucepan over low heat, add minced garlic and cook for 1-2 minutes until fragrant.

    4. Pour garlic butter over drained potatoes and mash until smooth.

    5. Gradually add cream and Parmesan cheese, mashing until creamy and season with salt and pepper.

    6. Heat oil or butter in a skillet over medium-high heat and add shredded potatoes in an even layer.

    7. Press down lightly and cook without stirring for 3-4 minutes per side until golden and crispy.

    8. Spoon mashed potatoes into a serving dish and top with crispy hash browns.

    9. Garnish with parsley if desired and serve immediately.
