Description
These chewy blondies combine creamy white chocolate with refreshing peppermint for a festive holiday treat. They bake up soft and dense with a shiny top and crunchy candy cane topping.

1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
2. In a large bowl whisk melted butter, brown sugar and granulated sugar until smooth.
3. Add eggs one at a time, mixing until fully incorporated, then stir in vanilla and peppermint extracts.
4. In a separate bowl whisk flour, baking powder and salt together.
5. Gently fold the dry ingredients into the wet ingredients until just combined.
6. Fold in most of the white chocolate chips, reserving a few for topping.
7. Spread batter evenly in the prepared pan and sprinkle with remaining white chocolate chips and crushed candy canes.
8. Bake for 25–30 minutes until edges are golden and center is slightly underdone.
9. Cool completely in the pan on a wire rack, then lift out with parchment and cut into 16 squares.
