  • 1 cup fresh pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • salt and pepper to taste
  • 68 fresh pineapple rings

    1. Whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, olive oil, and lime juice until sugar dissolves.

    2. Place chicken in the marinade and refrigerate for 4 hours, turning occasionally.

    3. Preheat grill to medium-high heat and oil the grates.

    4. Sear chicken for 3-6 minutes per side, then continue grilling until internal temperature reaches 165°F.

    5. Grill pineapple rings 1 minute per side until caramelized.

    6. Serve chicken with grilled pineapple rings and optional pineapple salsa.
