1. Combine softened cream cheese, pumpkin purée and vanilla extract in a bowl until smooth
2. Mix in powdered sugar, pumpkin pie spice and salt
3. Stir in crushed graham crackers until a soft dough forms
4. Cover and chill the mixture for at least one hour
5. Scoop and roll the chilled mixture into 1-inch balls
6. Freeze the truffle balls for 20-30 minutes
7. Melt chocolate gently and tint with orange candy melts if desired
8. Dip each truffle in melted chocolate and tap off excess
9. Add toppings before coating sets and chill until firm
10. Store in an airtight container in the refrigerator
