  • 2/3 cup pumpkin puree
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract

  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup semi sweet chocolate chips
  • 1/2 cup chopped pecans (optional)

  • Instructions

    1. Preheat oven to 350°F and line a 9×13 inch pan with parchment paper.

    2. In a bowl, whisk melted butter with brown sugar and granulated sugar until smooth.

    3. Whisk in pumpkin puree, egg yolk, and vanilla extract until fully combined.

    4. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.

    5. Fold dry ingredients into wet ingredients until no streaks remain, being careful not to overmix.

    6. Stir in most of the chocolate chips and nuts, reserving a few to sprinkle on top.

    7. Spread batter evenly in the pan and top with reserved chocolate chips.

    9. Cool in pan on a wire rack for 20 to 30 minutes before lifting out and cutting into bars.

    10. Store bars in an airtight container at room temperature or refrigerate for up to one week.
