1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. In a bowl, whisk together oats, flour, baking powder, cinnamon, and salt.
3. In another bowl, stir pumpkin purée, maple syrup, melted coconut oil, egg, and vanilla until smooth.
4. Pour wet ingredients into dry ingredients and fold gently until just combined.
5. Fold in dark chocolate chips until evenly distributed.
6. Spread batter into prepared pan and smooth the top.
7. Bake for 25 minutes or until edges are golden and a toothpick comes out mostly clean.
8. Let bars cool in pan on a wire rack for 20 minutes, then slice into 16 bars.
9. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
