Description

These chewy oat bars combine pumpkin puree, warm spices and melting dark chocolate chips for a nutritious fall snack. They are easy to bake, wholesome and perfect for breakfast or an afternoon pick-me-up.


Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • pinch of sea salt

  • Instructions

    1. preheat oven to 350°F and line an 8×8 inch pan with parchment paper

    2. whisk pumpkin puree eggs maple syrup coconut oil and vanilla until smooth

    3. stir oats baking powder cinnamon pumpkin pie spice and salt in a separate bowl

    4. fold dry ingredients into wet mixture until combined

    5. fold in dark chocolate chips

    6. spread batter evenly in pan

    7. bake 25–30 minutes until edges are golden and center is set

    8. cool completely in pan then lift out using parchment overhang

    9. slice into nine bars and serve
