1. Preheat oven to 350°F (175°C) and line a baking dish with parchment or butter.
2. Core each apple, leaving about 1/2 inch at the bottom to hold the filling.
3. In a bowl, beat cream cheese until smooth, then mix in pumpkin puree, sugars, vanilla, cinnamon, nutmeg, salt, and graham cracker crumbs.
4. Spoon the filling into each apple, pressing gently and leaving space at the top.
5. Cover the dish with foil and bake for 25 minutes, then remove foil and bake another 15–20 minutes until apples are tender and filling is set.
6. Let the apples rest for 10 minutes before serving to allow filling to firm.
