Ingredients

  • 2 cups cooked shredded chicken
  • 8 small tortillas
  • 2 cups enchilada sauce
  • 1 1/2 cups shredded cheese
  • 1 small onion, diced
  • 1 bell pepper, chopped
  • 1 cup black beans or corn (optional)
  • fresh cilantro for garnish
  • lime wedges for garnish

  • Instructions

    1. Preheat the oven to 375°F (190°C).

    2. Sauté diced onion and chopped bell pepper in a skillet with a drizzle of olive oil until softened.

    3. Stir in shredded chicken, beans or corn if using, and a few tablespoons of enchilada sauce, heating through.

    4. Spoon filling onto each tortilla, roll up, and place seam-side down in a baking dish.

    5. Pour remaining enchilada sauce evenly over the tortillas and sprinkle shredded cheese on top.

    6. Cover with foil and bake for 15 minutes, then remove foil and bake an additional 10 minutes until cheese is melted and bubbly.

    7. Let cool slightly, then garnish with fresh cilantro and a squeeze of lime before serving.
