1. Season chicken breasts with salt pepper and thyme.
2. Heat olive oil in a large skillet over medium heat.
3. Sear chicken for 2 to 3 minutes per side until golden then remove from pan.
4. Add onion and garlic to the same skillet and sauté until fragrant and translucent.
5. Stir in rice and cook for one minute to coat in oil.
6. Pour in chicken broth lemon juice and lemon zest and bring to a simmer.
7. Return chicken to the skillet nestling it into the rice mixture.
8. Cover skillet and reduce heat to low, simmer for 18 to 22 minutes until rice is tender.
9. Remove from heat and let rest covered for five minutes.
10. Fluff rice with a fork, sprinkle parsley on top, and serve with extra lemon slices.
