Instructions
1. Trim and clean the chicken breasts and place them in the crockpot.
2. Add crushed tomatoes, minced garlic, Italian seasoning, chicken broth, olive oil, salt, and pepper; stir gently.
3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
4. Remove chicken, shred with two forks, and return to the crockpot.
5. Stir in heavy cream and Parmesan cheese and cook on low for 15–20 minutes until silky.
6. About 10 minutes before serving, add broken ramen noodles and stir occasionally until tender.
7. Taste and adjust seasoning, then ladle into bowls and top with extra Parmesan or basil.
