  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 medium yellow onion diced
  • 3 carrots sliced
  • 34 small red potatoes cubed
  • 1½ cups green beans trimmed
  • 1 cup low-sodium chicken broth
  • 1 tsp dried Italian herbs
  • salt and black pepper to taste
  • 1 tbsp lemon juice
  • fresh parsley for garnish

  • Instructions

    1. Select Sauté mode on the Instant Pot and heat olive oil for 30 seconds.

    2. Sear chicken breasts 2–3 minutes per side until lightly golden, then remove and set aside.

    3. Add onion and garlic, cook 1 minute until fragrant, then deglaze with a splash of chicken broth, scraping up browned bits.

    4. Return chicken to pot and surround with carrots, potatoes, and green beans. Sprinkle herbs, salt, and pepper, then pour remaining broth over.

    5. Secure lid and set to Manual High Pressure for 8 minutes. After cooking, allow a 5-minute natural release, then quick-release remaining pressure.
