Description

A light and versatile alternative to pasta, this quick sautéed spaghetti squash is tossed with garlic, olive oil, and fresh herbs, then finished with your choice of toppings for a wholesome, satisfying meal in minutes.


Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley or basil, chopped
  • Optional toppings: chili flakes, lemon zest or juice, grated Parmesan, cherry tomatoes, grilled chicken, shrimp, chickpeas, or tofu

  • Instructions

    1. Cut the spaghetti squash in half lengthwise and scoop out the seeds.

    2. Microwave squash halves cut-side down with 2 tablespoons water for 8–10 minutes or bake at 400°F for 30 minutes until tender.

    3. Let cool slightly, then use a fork to scrape out strands into a bowl.

    4. Heat olive oil in a skillet over medium heat, add garlic and cook 20 seconds until fragrant.

    5. Add squash strands, season with salt and pepper, and sauté 3–5 minutes until heated through; stir in parsley and finish with desired toppings.
