1. Preheat oven to 350°F (175°C) and line a muffin tin with liners or spray with non-stick spray.
2. In a bowl whisk melted butter and sugar until smooth then add eggs vanilla vinegar and red food coloring.
3. Sift in flour cocoa powder and salt folding until just combined.
4. In another bowl beat cream cheese and sugar until smooth then add egg yolk and vanilla until lump-free.
5. Divide red velvet batter among muffin cups top with cheesecake mixture and swirl gently with a toothpick.
6. Bake for 15–18 minutes for mini muffins or 20–22 minutes for standard size until edges are set and centers are slightly fudgy.
7. Cool in the pan for 10 minutes transfer to a rack then refrigerate for at least 30 minutes before serving.
