1. Preheat oven to 350°F (175°C) and line an 8-inch square pan with parchment paper.
2. In a bowl whisk melted butter and 3/4 cup sugar until glossy, then add 2 eggs, 1 tsp vanilla, red food coloring, vinegar, and salt.
3. Fold in flour and cocoa powder until just combined, reserve 1/4 cup batter, then spread the rest in the pan.
4. Beat cream cheese with 1/3 cup sugar, 1 egg, and 1/2 tsp vanilla until smooth and pour over brownie base.
5. Drop reserved red velvet batter over the cheesecake layer and swirl gently with a knife.
6. Bake for 28–32 minutes until a toothpick has moist crumbs and the cheesecake layer has a slight jiggle.
7. Cool completely, then chill for 1 hour before slicing into 16 squares.
