1. Line a baking sheet with parchment paper.
2. In a bowl, mix Greek yogurt, honey or maple syrup, vanilla extract, and salt until smooth.
3. Spread the yogurt mixture evenly on the prepared sheet to about 1/4 inch thickness.
4. Arrange strawberries, blueberries, and raspberries evenly over the yogurt.
5. Sprinkle shredded coconut or granola on top if desired.
6. Freeze the sheet for 2 hours or until firm.
7. Remove from freezer and lift the parchment to break the bark into pieces.
8. Serve immediately or store pieces in an airtight container in the freezer.
