  • 2 cups cooked diced chicken breast
  • 3 cups cooked rotini pasta
  • 1 large cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • salt to taste
  • pepper to taste

  • Instructions

    1. Cook pasta in salted boiling water until al dente, drain and rinse under cold water.

    2. Season chicken with salt, pepper, and oregano, then grill or pan-cook until cooked through; let rest and dice.

    3. Dice cucumber, halve tomatoes, and slice red onion; add to a large mixing bowl.

    4. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper in a small bowl to make the dressing.

    5. Add cooled pasta, chicken, olives, and dressing to the bowl with vegetables and toss to combine.

    6. Fold in crumbled feta cheese gently to distribute evenly.

    7. Chill the salad for at least 30 minutes before serving to let the flavors meld.

    8. Before serving, taste and adjust seasoning with additional salt, pepper, or lemon juice if desired.
