Ingredients

  • 6 cups seedless watermelon, cubed
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves, torn
  • 1/4 cup thinly sliced red onion
  • 1 cup diced cucumber (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • salt and black pepper to taste
  • 12 cups arugula or mixed greens (optional)
  • balsamic glaze for drizzling (optional)

  • Instructions

    1. Cut the watermelon into 1-inch cubes and keep chilled until assembly

    2. Thinly slice the red onion and dice the cucumber, pat dry

    3. In a small bowl whisk together olive oil, lime juice, salt, and black pepper

    4. In a large bowl combine watermelon cubes, feta cheese, mint leaves, and optional cucumber and greens

    5. Gently toss the ingredients until evenly coated with the dressing

    6. Chill the salad in the refrigerator for 10–15 minutes before serving

    7. Drizzle with balsamic glaze and garnish with extra mint leaves if desired
