A quick, no-cook Halloween appetizer made with mozzarella, salami, and olives to look like spooky eyeballs—creepy, tasty, and perfect for parties.
Ingredients
- 24 ciliegine mozzarella balls (bite-size)
- 24 thin salami slices
- 12–16 large pitted green olives with pimentos, sliced into rings
- 8–10 pitted black olives, sliced into rings (optional for darker pupils)
- 2 tablespoons capers or finely diced red bell pepper (optional)
- 24 toothpicks or mini skewers
- 1 cup baby spinach or shredded lettuce, for serving (optional)
- 2 tablespoons mild salsa or marinara, for drizzling (optional)
- Freshly ground black pepper, to taste (optional)
Instructions
1. Slice olives into thin rings; set aside a mix of green and black rings for irises and pupils.
2. Drain mozzarella and pat dry so toppings adhere well.
3. Press one olive ring onto each mozzarella ball; tuck a caper or tiny red pepper piece inside for a pupil if desired.
4. Wrap or fold a salami slice around the bottom half of each mozzarella ball.
5. Secure each eyeball with a toothpick or mini skewer through the center.
6. Arrange on a platter lined with spinach or shredded lettuce for a vein-like effect.
7. Optional: Lightly drizzle platter with a little salsa or marinara for a spooky accent; add black pepper to taste.
8. Chill up to 3–4 hours before serving; cover tightly to keep mozzarella moist.
