1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
2. Toss sweet potato cubes with 1 tablespoon olive oil, salt, pepper, and smoked paprika; roast on a sheet pan for 15 minutes.
3. Season chicken breasts with olive oil, garlic, salt, pepper, and herbs; let rest.
4. Layer partially roasted sweet potatoes in the baking dish, top with spinach, then arrange chicken and asparagus over the greens.
5. Drizzle remaining olive oil and scatter minced garlic; sprinkle cheese if using.
6. Cover loosely with foil and bake for 20–25 minutes.
7. Remove foil and bake uncovered for 10 minutes until chicken reaches 165°F (75°C) and top is golden.
8. Let rest 5 minutes, then toss gently to combine layers before serving.
