1. Preheat oven to 350°F (175°C).
2. In a large bowl combine shredded chicken, cooked rice, and mixed vegetables.
3. In a separate bowl whisk together cream of chicken soup, milk, butter, onion, garlic, paprika, thyme, salt, and pepper.
4. Stir half of the cheese into the sauce, then pour over the chicken and rice mixture and mix until evenly coated.
5. Transfer mixture to a greased 9×13 inch casserole dish and spread evenly.
6. Sprinkle remaining cheese over the top.
7. Bake uncovered for 25–30 minutes until bubbly and golden.
8. Let rest for 5 minutes before serving and garnish with parsley if desired.
