Instructions
1. Drain and pat dry the mozzarella balls with a paper towel.
2. Wrap each mozzarella ball halfway with a slice of salami, trimming if needed.
3. Place one olive ring on top of each cheese ball to create the pupil, securing with a toothpick if necessary.
4. For a bloodshot effect, dip a toothpick in red food coloring and draw thin lines radiating from the pupil.
5. Arrange the eyeballs on a dark platter or in cupcake liners and garnish with fresh herbs if desired.
6. Serve immediately or cover and refrigerate for up to 24 hours, adding olive pupils just before serving.
