1. Preheat oven to 400°F (200°C).
2. Slice chicken breasts into thin, even strips and vegetables into similar-sized strips.
3. On a rimmed baking sheet, combine chicken, peppers, and onions. Drizzle with olive oil and sprinkle fajita seasoning, salt, and pepper.
4. Toss everything until well coated and spread in a single layer.
5. Bake for 20–25 minutes, stirring once halfway, until chicken reaches 165°F internally and vegetables are tender.
6. Remove from oven, squeeze lime juice over the top, and serve with tortillas or desired sides.
