Description

This one-pan dinner combines juicy chicken with colorful peppers and onions tossed in zesty fajita seasoning for a quick, flavorful meal. Cleanup is easy and prep takes only minutes, making it perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs boneless skinless chicken breast, thinly sliced
  • 3 bell peppers (mixed colors), sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • 1 lime, zest and juice
  • cilantro for garnish (optional)

  • Instructions

    1. Preheat the oven to 400°F (200°C).

    2. Slice chicken and vegetables into even strips.

    3. In a mixing bowl, toss chicken, peppers, onion, olive oil, fajita seasoning, lime zest and juice until well coated.

    4. Spread the mixture evenly on a sheet pan without overcrowding.

    5. Bake for 20–25 minutes, flipping halfway, until chicken is cooked through and edges are charred.

    6. Garnish with cilantro and serve immediately.
